Easy No Bake Energy Bites

The hunt has been on for awhile to find a quick and easy snack to grab when the dreaded pregnancy hunger - or regular old hunger - strikes.

I stumbled upon these little nuggets and my life has been forever changed. These squash my sweet-tooth cravings, tide me over till the next meal (or snack, let's be real), are so much better than any pre-packaged snack, and are perfectly bite-sized.

May I also add that Marcus loves these. He devours them like they're going out of style. He also loves to help me make these. All we have to do is measure, pour, and stir. It's seriously THAT easy!

Easy No Bake Energy Bites
Yields approximately 28-30 bites
Here's what you'll need:
1 cup old fashioned oats
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seed
1/2 cup chocolate chips
1/3 cup honey
1 Tbsp chia seeds
1 tsp vanilla extract

How they come together:
Pour all ingredients into a bowl and throughly combine.
Use a small ice cream scoop to create small, bite-size nuggets.
Place on a cookie sheet lined with parchment paper.
Refrigerate for one hour.

The only hard part about this (for me) was locating the flax seed and chia seeds. For those of you who are like me and haven't the slightest clue, check the baking goods aisle.

  1. Yes, yes! I make something very similar to these and we loved them... then I burnt us out on them, lol. Maybe come summer we'll make them again. I used to keep them in the fridge to keep them from sticking together too :).

  2. Would it still work if I left out the coconut flakes? Or substituted something else? They sounds good, but I do not like coconut.

  4. I've seen these everywhere and have never tried them! I think I have all those ingredients too, maybe tomorrow Aria and I can stir them up =)

  6. These look heavenly and will be a must make for us this weekend. They almost remind me of preacher cookies (no bake cookies) and I could eat my weight in those. Thanks for sharing, friend! XO

  7. These sound and look super good! But I have a few questions... I don't really like coconut (though I love GS Samoas! lol), do these taste a lot like coconut? Also, can you taste the chia or flax seeds a lot? I've had them before and while I know they are super healthy, I don't really like the taste either lol
