Thankfully, for whatever reason, strawberries are SO good right now. It's January… Weird, right? And, I had a bunch on hand.
Naturally, these coffee cake muffins were born.
Full disclaimer: my cravings immediately vanished the second I pulled these out of the oven. However, I was able to subdue the morning sickness long enough to actually enjoy a few. And, they were truly marvelous.
The cake was perfectly moist, the strawberries bursting with juicy flavor, and the crumble gave the perfect touch of sweet.
Strawberry Coffee Cake Muffins
Yields 12-18 muffins
Prep time: 10 minutes Cook time: 20 minutes
Muffins:
1/4 cup butter, softened
3/4 cup granulated sugar
1 egg
1 1/2 cups flour
2 tsp baking powder
1/2 cup milk
1 1/2 cup fresh strawberries, chopped
1 tsp vanilla extract
1/2 tsp salt
Crumble:
1/4 cup butter, cold
1/2 cup flour
1/4 cup brown sugar
1/4 cup granulated sugar
How they come together:
1. Preheat oven to 375º F.
2. Line muffin pan.
3. Cream butter and sugar in a mixing bowl.
4. Beat in egg.
5. Combine flour, baking powder, and salt in a separate bowl.
6. Slowly add milk and flour mix to butter mixture until fully incorporated.
7. Beat until completely combined.
8. Add about 2 Tbsp of batter (or an ice cream scoops worth) to each muffin liner.
9. Load the muffins with strawberries.
10. In a mixing bowl, beat crumble ingredients until it's crumble-y.
11. Sprinkle crumbles over the strawberries.
12. Reduce oven heat to 350º F.
13. Bake muffins for 18-20 minutes.
14. ENJOY!
If you can get your hands on some stellar fresh strawberries I suggest giving these a shot. They're easy to whip up, and a nice little change from your typical Cheerios breakfast.

ReplyDeleteSo why are they called coffee cake? Just because they pair well with a cup? I love strawberry muffins. We actually have some - strawberries that is. It is almost strawberry season here. Aria requests oranges strawberries butter and chocolate when asked if she wants something from the store ha. All good things!
