Cinnamon Roll Cake Muffins

As mentioned in yesterdays post we, spent our weekend celebrating our friends unite in marriage.
The beautiful couple, Laurie and Tim, on a beautiful day!!
To ensure our stomachs were never on empty I brought perfectly pop-able Mini Caprice Skewers for daytime/evening snacks and I knew I'd need something to fill us up in the morning.

Insert fabulous make-over of the wildly popular Cinnamon Roll Cake.

I didn't want to mess with the hassle of doling out slices of cake, so I did what only made sense. I took that cake batter and turned it into muffins. Brilliant!!

Cinnamon Roll Cake Muffins
Cake
3 cups flour
1/2 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 eggs
1/2 cup (1 stick) butter, melted

Topping
1/2 cup (1 stick) butter, softened
1/2 cup brown sugar
1 Tbsp flour
1/2 Tbsp cinnamon

Glaze
4 cups powdered sugar
10 Tbsp milk
2 tsp vanilla

Preheat oven to 350.
Line muffin tin with ALUMINUM muffin liners (learned this the hard way - if you use paper liners things become a bit messy).

For the muffins: In an electric or stand mixer add flour, salt, sugar, baking powder, milk, eggs, and vanilla.
Once combined well slowly stir in melted butter.
Use an ice cream scoop to evenly distribute batter in to muffin liners.

Topping: In a large mixing bowl combine 2 sticks of butter, brown sugar, flour, and cinnamon together until well combined and creamy.
Drop a spoonful of topping in the center of the muffins.
Swirl topping a bit, using a knife. The topping will remain mostly in the center of the muffin.

Bake a 350 for 10-12 minutes, or when a toothpick inserted near the center comes out nearly clean.

Glaze: In a small mixing bowl, mix powdered sugar, milk, and vanilla with a whisk.
Pour glaze into center of warm muffins - the topping should create a nice little crater for the glaze.
Serve warm or at room temperature.



We shared these with our friends, and they seemed to enjoy them as throughly as we did.
Do pardon my less than favorable photos today. Because we were traveling with these little gems I didn't add the glaze to the muffins until they were ready to serve. And, when it was time to serve these up I totally forgot to snag a few photos. However, take my word, these are just as scrumptious as the cake, and they look just as delicious as well!
