Valentine Cake Mix Jello Cookies

This week was a long one. The kids and I spent a lot of quality time together - alone. Scott put in some crazy hours, and sadly, we didn't see a whole lot of him. That meant we had hours upon hours to fill to keep ourselves entertained.

One afternoon I'd pulled out every craft, puzzle, and toy in our house, and we still had HOURS of evening to fill. So, to the kitchen we went. Marcus loves helping pour and mix and stir, and of course, throw sprinkles on to anything I'll let him. 

We decided we were ready to start our Valentine's prep. And Valentine Cake Mix Jello Cookies were born. 

Let's talk about how easy and quick these were to whip up. Marcus was able to help with every aspect (minus the cracking of the egg), and he thought it was just the coolest to make the cookies almost totally himself.

Valentine Cake Mix Jello Cookies
A fun, festive treat perfect for Valentine's Day
Ingredients
  • 1 box White cake mix
  • 1 box Strawberry jello
  • 4 Tablespoons, softened Butter
  • 4 oz, softened Cream cheese
  • 1 Egg
  • FROSTING
  • 2 cups Powdered sugar
  • 4 Tablespoons, melted Butter
  • 3 Tablespoons Half and Half
  • 1/4 teaspoon Vanilla extract
Instructions
COOKIES: In a mixing bowl combine cake mix, dry jello mix, softened butter, softened cream cheese, and egg. Mix until thoroughly incorporated. Roll out 24-36 balls and place on cookie sheet. Slightly flatten them. Bake at 325 degrees for 11-13 minutes. Move to cooling rack.FROSTING: In a small bowl combine powdered sugar, melted butter, half and half, and vanilla. Mix until smooth. When cookies are cooled, spread frosting atop cookies. Immediately sprinkle with festive sprinkles, if so desired.

I do have to point out that these are SUPER soft and SUPER sweet. I loved them, Marcus loved them, and I immediately sent a dozen to work with Scott (I couldn't have all that temptation staring at me for too long)! Scott informed me later that the cookies were a hit in the office. Glad I wasn't the only one who thought these were pretty fab. 
Grab a glass of milk and enjoy a cookie (or two). It's the perfect way to start celebrating Valentine's Day!

  1. These sound like my kind of cookie! I am all about easy and delicious! I am thinking about having a V-Day tea party for the girls and their girlfriends, and these would be perfect to make as part of the goodies!!
