Chicken Caesar Pasta (30 Minute Meal!)

There are some days that dinner ideas are lacking, time is of the essence, and I just don't have enough energy to create an elaborate meal. I generally call those days 'Monday'.

When days such as the aforementioned hit I turn to a meal that I picked up at a Pampered Chef party. Even if you don't have all the Pampered Chef materials I list, I'm positive you have something in your kitchen that would work as a great alternative.

So, if you're in need of an easy dinner idea that will likely please even the pickiest of pallets, give this one a go. And, don't be intimated by the fact that everything is done in the microwave. This dish is one of the best (and easiest) chicken meals in my recipe collection!

Chicken Caesar Pasta
4 boneless, skinless chicken breast - thawed
1/2 bottle Caesar salad dressing
1/2 onion, chopped (optional)
1/2 red pepper (optional)
1/2 green pepper (optional)
1 cup fresh, sliced mushrooms (optional)
2 cups uncooked pasta - I use whatever pasta I have on hand

Place chicken breast in the bottom of a microwavable safe dish that has a lid that will seal tightly.
Add veggies atop chicken.
Pour dressing over chicken and veggies.
Microwave, on high, for 20-25 minutes.
I use Pampered Chef Deep Covered Baker to make this dish. The chicken comes out perfect every single time. I love this thing. 
While the chicken is cooking, cook pasta according to directions on package.
When chicken is done cooking use salad chopping sheers, or two forks, to shred your chicken.
This is the PC Salad Chopping, which I use to shred chicken. They make shredding chicken SO much easier than the two-fork-method!
Stir chicken mixture to combine veggies and shredded chicken.
Top noodles with chicken and veggies.
There you have it. Dinner!

  2. I can't decide if this looks delicious or horrible (sorry), haha. I am not a huge fan of caesar, but I love chicken and pasta. It does look super easy though!

  5. Have you tried shredding chicken in the Kitchen Aide mixer? I saw it on Pinterest (of course), so I had to try it out and it's AWESOME. Seriously, so easy. Just throw the warm chicken in the bowl with a paddle attachment and mix on low for a minute. Viola!

  8. I'm going to have to try this! I may get all crazy and throw it in the crockpot just because I'm obsessed with it and like the whole place to smell like gummy food :)
