Talk about easy peasy!
Smothered Chicken and Broccoli
1 package rice (your choice, there are about 500 different kinds of rice at the grocery store, pick the one that sounds good to you!)
1 can cream of chicken soup - 98% fat free (or use cream of whatever-you-like-at-the-moment soup; next time I make this I'm grabbing the cream of asparagus)
Approximately 1 cup fresh broccoli florets (I didn't measure, I just threw enough broccoli in to cover the pan)
Fresh cracked pepper.
Preheat oven to 400.
If you're prepping this for just two, use a 9x9 pan (I'll explain below what to do if you're cooking for a party greater than 2).
Grease the bottom and sides of your pan.
Add uncooked rice to the bottom of the pan.
Place thawed (raw) chicken atop the rice.
Add broccoli on to of the chicken.
Smother cream of chicken soup atop the broccoli.
Top it all off with the cracked pepper.
Bake for 30-45 minutes.
4 chicken breast
2 packets of rice
2 cans of cream of fill-in-the-blank soup
Double the amount of broccoli
If you're cooking for 6 people...
6 chicken breasts
3 packets of rice
3 cans of cream of fill-in-the-blank soup
Triple the amount of broccoli
You get the idea. Obviously, as the number in your party expands so will the size of the baking dish you use.
This is some good stuff! The left-overs rival the dish hot out of the oven.
